How moist is the frittata? My concern would be sogging up but maybe kettle chips could hold up or adding them at the end of the bake when the egg has solidified.
Could also toss them with a little oil to promote browning also.

Go for it - you never know until you try.
(I like to put thin sliced potatoes UNDER a frittata, sometimes, then bake it.).
Although I think those french fried onions in the can, the ones used for green bean casseroles, would be even BETTER.
