Did you freeze any of it? Sometimes I have 2 to 3 premade separate dishes in my freezer so I end up rotating what I wanna eat. It really does make life easier. Dishes used are minimal.
I can eat four servings of anything, but after that, I draw a line. Freezing makes sense for me.
I buy a bag of avocados and a container of smoked turkey dip at Costco every week. I put a small amount of the dip in an avocado half for lunch every day. Add some Fairlife protein drinks for a snack. Not too expensive for single meals.
You'll get better at it. Less time as your skills improve, less cost as some ingredients last a long time, and you'll find dishes you really enjoy. Keep at it.
