Oogenesis, the production of "large reproductive cell," continues until around 20 weeks after conception (with some evidence suggesting that it may continue later into a person's life), and spermatogenesis doesn't begin until puberty.

There are still questions about when oogenesis stops, but it seems likely to be done by the time a person goes through menopause. While spermatogenesis theoretically continues for a person's entire life, there are a number of reasons why it may stop, including hormonal ones.

Of course, there are people who, for a variety of reasons, never produce reproductive cells, at all. I'm reasonably certain (though I'd have to dig into the literature) that there are some recorded examples of people producing both reproductive cells, to some degree of maturity/fertility.

If we were to take this logic seriously as the defining characteristic of sex, it would create far more than two sex categories, which people would move into and out of as they age and experience various health issues. It would also render sex indeterminate without a microscope at minimum.
