Manage to make successful gluten free Yorkshire puddings. Key is to use cornstarch because gluten free flour is too stodgy for them to go nice and fluffy.

Fry 600g meatballs and put aside
Fry onions/garlic in fat.
Add 1tsp tomato puree / two tins tomatos / 750ml beef stock
Herbs/spices then add meatballs back in
Simmer 20 mins
Add 400g rice and some peas
Simmer another 15 mins
It’s quite common to serve stew, meatballs, even cheese & veg in side plate sized Yorkshire Puds
(The small bun tin sized Yorkshire Puds are cheating 😊😊)
Toad in the Hole, sausages inside a large Yorkie, is still my all-time favourite meal. My Mum used the recipe in Mrs Beetons (Victorian) Cookbook, handed down from her grandmother, and if I am ever to be executed, that will be my last meal.
No doubt, excellent with the right sausages (which is to say whatever your favourite sausage is, mine is probably merguez, don’t @ me).
But when the meatballs start to break down and mingle indiscreetly with the soft base of the Yorkie….(insert meme of drooling Homer Simpson here).
Gluten free flour + cornstarch - or just cornstarch?
I've given up on making gf yorkshire puds and toad in the hole because they just end up sort of doughy instead of crisp.
Ta. Maybe I will try again! I find extra eggs sometimes helps as it replaces some of the sticky-binding quality of gluten. But it didn't help much with yorkshire puds.
This is gold. Starting coeliac diagnosis journey at 42 as a rabid consumer of gluten and mourning the end of my sourdough days. Never realised how floury a roast was until I couldn’t use it.
