Have a google for “reverse sear” method for slow cooking interior and then blasting the outer!
Taste comes from the fat so look for marbling in the cut, thicker the better.
Season both sides
Hot pan
Butter and oil
When butter foams add garlic clove and rosemary
Turn over after 3 mins (depending on thickness)
Add another knob of butter and baste regularly
