Can you control what is cut? For example can you just dissolve the walls while leaving the furniture inside intact?

Yeah, You can do this, Just don't apply the dissolve material to the furniture.

There's likely a way to hook up collision profiles for it to ignore certain channels and still "exist" within the volume.
I'm curious how OP did this myself

It's use a Box mask inside the material and the other one is using mesh distance field.
