It’s not the big parts that are the main issue, those generally bend off, it’s small pieces and especially the priming strips, which are essentially glued to the plate now, that are the real problem.
I've got a good hand-mangler from my old Ender3. I don't think I can really stress just how glued the PETG has suddenly become on this PEI sheet. The priming strips have to be aggressively scraped off, and even then you can see some residue left behind between in texture.
It's almost like the z-offset was somehow changed or is being miscalculated. But I can think of no reason whatsoever that that would have suddenly become a problem after never having been a problem before.
Maybe your plate is worn out? How long have you been using it? I’ve only got like 800 hours on my machine. I know you’ve been printing a lot more frequently than I have.
Worn out plate is my current best guess, though that would surprise me because PEI is not historically the plate I've used the most, so I don't think it's got that many hours on it. I should try moving it to one of the other machines and see if the problem persists.
Have you tried glue sticks on the pei plate? I’ve read that it works for some folks. Maybe tweak your bed heat as well? Where are you getting your filament, that could be the issue. I run only Bambu product (except some color change sunlu PLA but I hate the 250g spools).
I print with PETG almost exclusively on the PEI plate and once they’re cool they slip off so nice. Smooth plates are a little harder but the glue stick helps soooo much!
