there was a japanese place in austin that had charred lettuce w this tobiko kewpie mayo dip that was actually pretty good. but the lettuce wasnt really hot just charred. it gets all slimy when it's hot!
Have you had Maid-Rite burgers in Iowa? I've been out of the meat game so long that I missed the chopped cheese wave, but the second I heard about them I was like "oh, we talkin' loose burgers?"
there was a maid rite in the town i went to college in out there. wasnt a huge fan of those either but as far as iowa cuisine goes it's pretty good lol
Weirdly there was a maid rite style diner in Colorado Springs that I used to go to in high school. Kinda think that's about the peak for the style, tbh, just a "different" (not better) option to high school cafeteria food.
Only 'wich in the chopped cheese genus that is worth a damn is a nice chopped buffalo chicken. But I especially want to disrespect cheesesteaks. Philadelphia has it's charms but we've been coddling them on that particular bullshit for too long.
Hot lettuce and hot tomatoes are just a no for me. I love them on burgers for examples but only if they are put on moments before the burger is served. Otherwise they are warm and I don't get the contrasting cold snappiness from them compared to the warm meat and cheese.
