picky eater, living in a rural area, somewhat underweight: how cooked am i if i want to be vegetarian? what do i need to know? are there supplements i can take? i am so grossed out by the treatment of animals that i can hardly force myself to eat meat anymore.

The "picky" part throws it off when you're already eliminating a major source of nutrition.
Animal on Amazon is cheap and decent. That chocolate is a bit more flavorful.
BJs used to have Combat, which was downright tasty. Harder to find now & pricey when you do.
Stovetop beans & grains like quinoa — v easy & can make large quantities. Steam veggies easily with a little water in a pan. Play w/ seasoning. Bake sweet potatoes & squash. Try different protein powders.
Build from there.
