That looks so much more appetising and flavoursome than one I had in a now-defunct cafe in Plymouth. They barely cooked and seasoned the poor mushroom and left it to fester in its watery juices in a now very soggy bun with nothing but a solitary lettuce leaf and a sachet of mayo on the side.

Your veggie + vegan recipes are excellent. Thank you for sharing them. I made your butternut squash and halloumi burgers a couple of weeks back, and they were a huge hit. A couple of extra portions I made re-heated amazingly well the next day for lunch.
