My (Belgian) mum didn't use flour to thicken her stoofvlees. She used to generously spread mustard on 2 slices of bread, put them on top of the stew and let them melt into it. She also used sirop de liege instead of sugar. Fantastic with double fried homecut chips!
All the recipes I found online included pain d'épices, based on my vague memory of what that tasted like I used McVitie's Jamaica Ginger cake instead and it seemed to work pretty well.

Stoofvlees or stoverij we call it sometimes in Flanders. There are many variations to thr recipe mostly to do with the beer to be used and the addition of the caramilzed sugar, mustard and bread

I would go for Chimay blue as a brown beer though. It should be a sweet tasting brown beer. Nothing bitter.
