Honestly, just watch Gundam Wing. Toonami deemed it good enough as an entry point for Western audiences back in the early 00s and it’s nicely self-contained too.

Not sure where you’re located but US Netflix has the compilation movies. That’s the easiest entry point. Will allow you to enjoy the Gux parallels too.

Yeah exceeeeept the idea that Zeon are the bad guys and the Earth Federation are the good guys is not an accurate description of the setting. They're two opposing sides, both of which have done horrific things. If you're interested, watch the first episode of the original series after watching ep 2

For GQuuuuuux it’s best to watch the Original ‘Mobile Suit Gundam’ or the compilation movies to catch up, then you can continue the Universal Century storyline with Zeta, ZZ Gundam and finally Chars Counter Attack if you like that universe.

You don’t have to watch the latter 3, but they do develop the universe.

Most of the other Gundam series are there own self contained thing, so not needed for Gquuuuuux but there is some good shows in there.
