Something with classes and co-op and good gameplay.

Dragons Dogma 2 was real close but no co-op and a really stunted game that felt unfinished.

Oh, I thought of two potentially better examples than what I mentioned before. Check out Grim Dawn (more dark fantasy there but it's an action RPG with a lot of equipment and skill customization, and full co-op support) or Titan Quest (along the same lines, but Greek mythology themed). Both on Steam

The gameplay part might be a bit iffy, but have you tried out Final Fantasy 14? Classes galore in that game, and co-op in dungeons is encouraged.

I played FFXIV from 2017 to this year. The last expansion lost me between agonizing quest design and the continued dumbing down/stagnation of classes.
