That’s mine as well — I have a really good chicken noodle soup recipe, and I always have a few single servings in my freezer. Perfect for a cold night when I don’t want to cook.
boil water with one or more stock cubes, chuck in frozen peas or broccoli, chuck in rice noodles or udon or soba, when everything's done, chuck in an egg and leave for about a minute, pour into nice bowl, add toasted sesame and sriracha sauce, leave ~10 mins to cool, enjoy
My absolute favoritest thing to do with turkey carcass is make pozole with it. I stew some maligned cut of pork (eg trotters) while the carcase is reducing to broth, then use deboned pork, tomato paste, hominy, turkey bits, and chiles to make soup. That's then served w/radish, avocado, lime & herb
This thread is 98% of what we eat. Favorites: homemade ramen, matzoh ball soup, chicken tortilla soup, beef bulgogi, bacon and leek pasta, garlic noodles, homemade fried rice, salmon risotto. My break-glass-in-case comfort food? Amy frozen mac n cheese.

Chicken fingers, mashed potatoes, mac and cheese. They don’t all have to be together and sometimes I do a little variety. Chicken and egg noodles over mashed potatoes are right up there.

It’s not the result that matters, it’s how I got there. I can stay comfortable all day.

Make it with a rotisserie chicken to cut down the prep even more.
(It's very region specific and I don't get to have it enough where I'm living now. But when I do it's like I'm home again.)
In New Mexico we also make turkey enchiladas (red or green whichever is hotter at that season).
