My favourite dish is Peas with Chouriço. It's peas in tomato and onion sauce with chouriço slices and a poached egg. It's great because you have the sweetness of the peas, a slight acidity of the tomato, the meaty, smoked, and salty flavour of the chouriço and the egg.
