Stew-style borscht is such a great filling soup! You can make it with fresh beets and it freezes beautifully. I like ones with a bit of meat/meat stock, but I know lots prefer veggie only.

Absolutely! My area produces stellar beets (they love a cold climate). Every fall I do up a couple of big batches of borscht when they show up in my grocery store. I freeze "dinner for two" amounts and a bunch of smaller containers for at work lunch.
