The update also enables Apple Intelligence by default. The following are two ways of disable AI, Settings > Apple Intelligence -> uncheck it. The other is to have the phone language to one language and Siri's to another language or a variation. Apple Intelligence requires both to be the same.

Another note. Just had my wife check her brand new 16 - and that setting isn't there. Probably because her's is AT&T, not T-Mobile.

From what I see in the article, this appears to be exclusive to iPhones on the T-Mobile network? (I’m have a different provider, and like you, I do not have the satellite option listed as described in the earlier post.)

Maybe? I always go through to check my settings, privacy and security in particular, after every update as a rule. I turn off every shenanigan I find. This is the second time I have had to turn off these satellite settings.

I do the same, but I haven’t seen the satellite option anywhere in my settings. I have to be missing something. I might need to stop by VZW in-person to see if they can help me figure out where the setting is.
