Yes it’s a verbal tic when people speak, but when typed out? Yes it might’ve been dictated so speech becomes text, but wouldn’t you check the text and remove the “like”?

If it is a micro-pause to get the next word out (most common), then I wouldn’t transcribe it. I’d treat it in the same way as ‘uh’ or ‘er’ when transcribing subtitles.
If it sounds as if they made a conscious choice to say it, then I would include it.
