I think gravity symbolizes something like humanity's relationship with its history.
In OG Gundam, the characters note that earth's gravity weighs down people's souls. Humans who are weighed down by gravity cannot become Newtypes, and end up stagnating and resenting human progress.

But it's still the core of Gundam's philosophy: Whether humanity can actually escape it's tribal history in the space age, or if we're doomed to repeat history because of our monkey brains...
The constant reminder and mirrors that the stories of Gundam present to us never ceases to astound me.
