Just saw this and your idea about CarPlay, I’ve done a similar implementation with an iPad mini.
if your car has a CD or cassette player, there’s probably some connection for analog audio on it that you can hijack and output audio from the Pi. I use one of these: https://www.sparkfun.com/products/11570

For power, there’s probably 12V wires and you can use a buck converter to get to 5V
