Play Caves of Qud then, it just came out and it's one of the craziest open world roguelikes ever made. Once you get used to it it's like Elder Scrolls crossed with Dune and Watership Down, and YouTube unfiction, and created by anarchists
You can play a centaur with four arms and two heads wielding a chaingun or a cyber ninja who throws force knives or a psychic who possesses people and makes them set themselves on fire or a mole man who digs holes and then after the holes are dug digs more of them because holes are awesome
Speaking of holes, the world map is like 64x64 blocks of 3x3 full screens of ASCII tiles each, and also nearly every part of it has 20-50 layers of caves under that

Might not be the same type of open world you’re thinking and you’ll have to trade the backpack for an old station wagon but Pacific Drive might work and it hits.

I always resisted games like these since they were 'too easy' for my liking compared to my beloved Everquest. But after playing No Man's Sky I really like just a more chill game time.

Can try Elin (on Steam!) It's a modernization and upgrade of an old freeware game called Elona. It's kind of crunchy and won't be for everyone, but it's hard to get more indie!

The frame rate is amazing, great resolution too. Saving and respawning seems to be buggy though, something about having to install the "Buddhism" DLC?
