My suggestion is to get the USA made pressure canner and just follow the guidelines. IMO it's much easier to do everything plain and add flavor when you cook it. Exception would be pickles/things you eat from the jar, but at scale you're not doing much of that

Canning is pretty easy. Doing it faster just takes practice, mostly about how to use the space and tools you have/figure out a workflow. You will also have some failures, like broken jars, lids that don't seal, overseal, but it's a small enough amount

One thing I would suggest is, unless you're growing large quantities, consider buying bulk and canning that, instead of your own produce, if you like one long session rather than many small sessions. Like, I'd rather can 40 jars of tomatoes in one day than over a month

(tomatoes you can freeze until you have enough though, but the idea applies to anything) Also don't overfill the jars.

Also, unless you are building a stockpile, don't forget to eat them! Sounds obvious but 40 jars of tomatoes means 40 red sauce pasta dinners which means once a week for 9 months of the year. That's a lot!
