I'd shudder to think what my extents map would look like, but it'd be impossible to make as my work is spread across ArcMap, ArcGIS Pro, Illustrator, on different servers and continents, and for many different companies!

I work almost exclusively in ArcGIS Pro in that job. Sometimes I need to use Illustrator for more refined cartography, but those maps would probably still be included in this as I do all the data prep in ArcGIS Pro first.
Pretty much all of my maps these days start in ArcGIS Pro and end up in Illustrator because I hate managing annotations and like my special effects and brush strokes a bit too much!
