Actually KoTOR 2 has a soundtrack composed by Mark Griskey, who's a much better composer than the guy who doesn't exist who composed the non-existing stuff for those other games
I played Daggerfall in 98 with an adlib. Only one of the tavern tracks was available. The one that goes TU LULULUP TULULUUUP TULULULULUP TUU LULUP TULU TU TULULUP. My ears are still bleeding but I didn't know any better.
It is strange, though if they ever wanted to add soundtracks to future games I've heard that Eric Gordon Berg and Daniel Ran from the Beyond Skyrim projects have serious talent.
