Sous vide, 119°F for an hour, then slather wirh melted ghee and a fuckton of kosher salt, sear for roughly one minute per side on the hottest grill you can muster.
Pan sear with butter, garlic and shallots in a cast iron skillet (also big chonky salt). Then put it in a 400 degree oven for a bit, also a bunch of basting with that butter.
Serve with broiled and spiced brussel sprouts, maybe some roasted corn.
