Which trail? All terrain tires and all wheel drive (if not full 4wd) is generally minimum equipment for anything beyond a nicely graded gravel road, especially for someone new to this

I'm looking for something scenic and easy in southern California. I've been looking at Big Laguna Lake Loop, Tenaja Falls, or Palomar Divide Road. They are rated as easy, but the reviews make me think otherwise.

Absolutely - you will be fine on many forest service roads if they are dry. Typically if the roads have two or three digits without a following letter they will be ok, but get local intelligence from a local FB overlanders or dispersed camping page. Turn around if anything makes you nervous!

Parks are now restricting some trails if you don't have 4WD. And gravel and rock are hard on street tires - get some suited to offloading and air down as soon as you get off sealed roads. Maybe look to join a group like Overland Bound to have company and people with experience.
