Making your own pickles is so rewarding. I had a 'pickle/ferment everything' phase and it was great. Hundreds of jars in my 1bdr apartment, some to massively successful results. Melons/squash were top tier.

It was actually pretty cool! I spent a ton of time in government/disaster relief and had a mental breakdown so went back to college.
Learned how to brew, then took it to the next step to work in labs doing fault testing for both canned foods and alcohols.
....I'm back in tech. But it was fun!

Years of canning, both pre and post education, and pre and post professional experience, I have never had a case of botulism. This person's education is scare articles from, I dunno, BuzzFeed. But they're usually more entertaining.
