Longhorn uses a bit of resources. It also uses the local disk on the nodes with iscsi and nfs. Are you running VMs? or Managed k8s?

Where is the storage? If you have an external NFS then you can simple create the PV before the PVC : github.com/clemenko/k8s...
Or I would use Longhorn longhorn.io

lol. We had an 8tb drive. We needed 30 days of coverage. So yes we have an NVR now with 4-8tb drives. works like a champ. I really appreciate local storage instead of the cloud.

I have had both. I upgraded because the wife wanted a nature cam. The Max, with the drive, can run Protect and record. That is the only difference.

Creating and using mock databases can be tricky.
There are many environments where nothing can be run locally. Applications like Coder can provide the needed separation that is required. Outside those circumstances, I agree with you that laptops are getting fantastic.

What about for data provenance? There are circumstances where developers are not allowed to build/run anything locally.
