Damn! Look at that crispy skin! Salted, peppered, and brushed with veg oil. Roasted at 240⁰C with the convection setting. Keeping the ovan closed (no basting), it got brown before it was at 165⁰F inside the breast, so I dropped the ovan temp to 200⁰C and turned off the convection.
