Of course, it is worth noting that Pratchett had a few noticeable jumps in quality over his career, so some of the initial books can be a little rough. But the series most impacted by that is the Rincewind series.
Mort was the first notable jump, and Small Gods was another.

It really depends. The Discworld books are a collection of series that are in the same world. So, knowing what your into will help you choose.
If you enjoy mysteries and police procedurals, the Watch series is what you want. If you want folklore/myths/stories, the Witches are great.
