Yeah just flip it with a spatula once the eggs set enough to bind to the tortilla and I drizzle it with hoisin and chili oil then just fold it in half like a taco. Crisp up one side, then flip it to crisp up the other side. I saw it as a NYT recipe, I think? It’s probably findable. :D

I do a thing where I whisk eggs and scallions together and then throw a tortilla on top to bind to the eggs as they cook. Toss in some hoisin, fold it up and crisp up the tortilla. Super quick breakfast and will scratch the scallion pancake itch somewhat.
