The flexible dining wasn't terrible (I kinda like the meatballs and pasta, and I did like how you could just have it delivered to your roomette). But when you compare it to what was once on offer, it does leave something to be desired.

I know for a while there Amtrak was doing basically microwaved meals on long distance routes due to the pandemic, but I think most routes have gone back to the traditional offerings.

The food on Amtrak has always been above my expectations.
The best burger I've ever had was in the dining car on The Sunset Limited, but even the offerings from the cafe car on shorter routes are pretty good.

Yeah but as far as big corporations go, LCs is pretty cool. The CEO paid Rosa Parks' rent until she died and refused to be recognized for it because he didn't want it to be seen as a publicity thing, and they've donated hundreds of millions to the revitalization of Detroit.

Keeping to my own philosophy of "Don't knock it till you try it" I got a pizza with anchovies the other day. The flavor was unique but waaaaay too salty for my taste. And was definitely better fresh than reheated.
