Iberian (Portugal & Spain) Chourico Portuguese chorizo), White Bean (I used Great Northern), & Kale Soup with home-baked Rosemary Sourdough Rolls slathered in butter. Soup is my comfort food? It also has onions, garlic, and diced bell pepper (I used yellow), sweet paprika and bay leaves. YUM!!!

Sheet pan Mediterranean vegetables, potatoes, and cod. Marinated lemon juice, olive oil, garlic, oregano, salt, and pepper, and then roasted. I could have used chicken or salmon (or tofu or tempeh if I could eat those, which I can’t. (Cont’d in comments)
