Has some nice information to include temperature and time charts. So you bring water to temp, season whatever you are cooking. Seal it in the bag and get rid of all the air. Submerge the bag ensuring the contents are completely under water. Cook for desired time. You can then remove and sear to 2/3

Basically you are cooking in a temperature controlled water bath. You can but a kit or piece one together. You need Immersion circulator that keeps water at a precise temperature. Plastic container or large pot. Sturdy zip lock bag or sous vide bag and vacuum sealer. Serious Eats website 1/?

I am very curious about it. I am sure they have put their unique spin on things. Could be heavy for sure, but unlike some other authors who I have to remind myself they aren't romance authors, so do or don't expect... they tend to keep and deliver on a thread of hope.
