Souls are generally pretty open, usually non-linear to some extent
Nioh very occasionally offers a branching path, but for the most part its levels are like roller coasters to offer a very specific experience

for me, the difference is that missions in Nioh are like distinctly action gamey. Fast paced, generally a lot more dynamic than any area in a Souls game,

I think a big reason is that most of them are like way more capable of killing you even just one on one
Souls enemies generally aren't gonna get super threatening until you get to like black knights/crucible knights and those sorts of things
