The annoying thing about making bread in the afternoon is that as I'm on my way to bed because I'm tired and it's been a long day and I'm getting up before 6 tomorrow, I find the nicely risen dough in its pan and it needs to be baked. Ten minutes oven preheating, 30 mins baking. Bed in a bit.

I teach a class called 'the 10k year pizza': a very rapid run through global food history. Students are always shocked when they see how global plants in European cuisine are. But these plants are substitutes or additions into evolving culinary traditions - I would love to see this exhibition.
