Why unproductive? We already clarified that they are GDPR etc compliant with highest security standards. There is nothing more you can do I think.
My point is, if this is not enough then don´t use it.
Because you can´t change it anyways. I see no other option here.

Totally I see your point and fully agree to that.
According to GDPR they must tell you with which other parties they wanna share the data and for what purpose.
Is there something noted in the process?
Maybe we need to wait and see it somehow in action later?

If you don´t trust this then you are totally open to not use it. No one is forcing you. That´s totally fine.

I think that scan is used to match the biometric photo on your ID with the person in front of the phone. What in person would do a human. The only option we really have is to trust them to delete this when we want it.

I am in germany. It also was a 3rd party provider called PostIdent. It was a video call and I had to move my ID card in different angles and also my face to match it somehow. Which data they really store I have no idea.

When I created my last bank account I had the same biometric verification process as mentioned here.

I would say this is a good plan. As soon as you are verified all the data is not needed anymore.
