This happened to me. Combustion's latest Predictive Thermometer supports immersion under vacuum which is nice. Chris Young has a YouTube video with methods to speed up cooking. (My latest curiosity is combi ovens with bagless sous vide.)

FYI: Switching from the discount a few months ago (paid monthly) to this discount was a little tedious! The links didn't bring up anything if you're already logged in. Cancelled monthly, resubbed with annual while logged out, hopefully it worked. 🤞
