You could try Asian noodles dishes instead of pasta. If you google the noodle + vegetarian I’m sure you could get a lot of ideas. Soba, glass noodle, tapioca noodles, mung bean thread, rice noodle, vermicelli, hu tieu. Also fresh spring rolls with veggies and vermicelli and a peanut sauce!
