Oh buddy, it'll be the best decision you ever make! Start with the first 3 games, remastered or original, it's your choice. If you want to play Gears in timeline order, start with Judgement first. Be warned, though- it's story is a bit crap compared to the original trilogy...

Mine goes as follows: Raid the shops for supplies, turn an abandoned military base into my fortress, gather a group of my friends and family, and hold out until some guy creates a vaccine and mass produces it instead of hoarding it for themselves. Capitalism would likely make that impossible though.
