get a big fry pan. throw down a bunch of shredded cheese. let it melt. take a tortilla and put in the middle & rotate to mop up the cheese as it begins to melt/burn. then fold it onto itself and fry the tortilla in the cheese grease that remains until its browned. That makes for a good quesadilla
