anyone else's igniter regularly go out on their samsung gas oven? idk if it's because i bake bread regularly at 500F or if it's just a crappy part. i've gotten pretty good at replacing it though, luckily it's just removing screws and replacing it

#baking #sourdough Well, it's done. If you're not sure, stick a temp probe inside and make sure it's 190F - 200F. If you pick it up, carefully, and thump the bottom, it will have a nice thud that is kind of hollow sounding. Let it cool on a wire rack before cutting.

#baking #sourdough After 18 mins, remove lids and bake another 18 mins. I usually turn the temp down to 450 and switch to convection as well

#baking #sourdough Alright, it's been about 4 hours and I put my cooking vessels in and preheated my oven. I think the igniter is going out again. I use a cast iron dutch oven and a terracotta baking dish. Turn a loaf out onto parchment and score. Bake at 500F covered for 18 mins

#baking #sourdough After 15ish - 30 mins, do final shape and place loaves in banneton, top side down. Flour the bottom a little and cover with a dishcloth and return to warm spot for 4ish hours

#baking #sourdough So, I did all the stretch & folds, basically you lift parts of the dough up to stretch and then fold it over. Now it's time to pre-shape. I dumped the dough out, divided it in half, then did a pre-shape to build some tension and covered it, and floured the bannetons.

#baking #sourdough My homemade proofing area. I put together an inkbird ITC-1000F temp controller and an outlet, with a low wattage (10ish?) seed starting heat mat, and set the starter and dough on a coaster on the towel-covered mat, along with the temp probe and covered it all with another towel.

#baking #sourdough Top up the starter. I'm planning on using 100g tomorrow and I feed it at a 1:4:4 ratio (starter:flour:water), so I put 20g of starter in a jar with 80g each of flour and water to give me 180g to work with tomorrow.

#baking #sourdough I used to just add all the flour and mix, but I've noticed I can get the starter more active by giving it an autolyze period. I add about 700g of the flour to the mixer and let it run until thoroughly mixed. Then cover the bowl for about 30-45mins

#baking #sourdough Measure 1000g of flour into separate mixing bowl. Here I typically use 200g whole wheat and the rest AP (King Arthur or Wheat Montana usually) but today I was a little short on whole wheat so I added some oat bran as well. You can also use things like rye, spelt, other crunchies

trying to move away from plastic use. any recommendations on natural clothing - good brands with quality clothes made with cotton, wool, linen? is "modal" made using plastic? is "spandex" bad? is fabric made from bamboo so processed that it's plastic at this point?

Made chocolate sourdough from a tiktok recipe. Basically sourdough + cocoa, coffee, brown sugar, vanilla, chocolate chips. Really exploded in the oven, tastes like average between sourdough bread and brownie #sourdough

Too many local restaurants and other businesses' only online presence is fb/insta and a static web page. Even an org I'm a member of. Too much assumption everyone is on there. I want to leave everything meta but don't want to miss the local specials and news.
