You absolutely must be thinking of private/friends games because I have just played general online mode and there is no button to choose any stage.

Would prolly be too granular for public online play, but I do wish there was an option to end intermission tracks with 2/3 laps, especially with the weirder ones. Yesterday I discovered W.Stadium -> S.G.Bazaar ends with a totally unique lap mostly set inside the big palace I'd love to play longer
