Then add a tin of tomatoes, a jar of Bolognese sauce, puy lentils, 2 bay leaves, salt, pepper, 1 mushroom stock cube. Simmer until the lentils are soft. Then (optional) add a bag of frozen Quorn mince. Simmer until that's cooked, remove the bay leaves, and you're good to go.

Good call, and congrats. I'm a long time veggie, currently trying to be more vegan. I just made a delicious veggie Bolognese last night, which would work well as a lasagne filling. Chop and fry: onions, celery, carrots, garlic then after a bit add mushrooms.

I'm veggie, but trying to reduce my dairy consumption. I've started by replacing milk and butter, because the alternatives are so good. Cheese and yoghurt are a bit harder to replace, so I'm reducing.

I reckon the extras make the dish as much as the falafel themselves. A really good mix of salads, pickles, chilli and sauces. Get that right and it will mask any slight deficiencies in the falafel themselves.

Add to that the fact that the waiting list for an NHS ADHD or autism assessment is 3-4 years.

My daughter, for example, needs extra time and a quiet space free from distractions. This means a separate room to the main exam hall, and separate teachers to invigilate. The school doesn't have enough rooms or teachers to provide this for all the children who need it.

As a parent of a state school student I can confirm that the state school mantra is 'ask all you want, but you won't get'. The basic reason being they don't have enough resources to provide extra time/other support for all the students who need it.
