It's a long, long read, but I've been thoroughly enjoying The Stormlight Archives, by Brandon Sanderson. Any Sanderson book is a very good read.
The Brotherband Chronicles and The Ranger's Apprentice also come to mind, by John Flanagan.

Possibly! But not everyone has the brain power or desire to dissect a Neal Stephenson novel, or Shakespearean plays. Simply because someone doesn't wish or have the ability to consume the same complexity of media as you doesn't mean they aren't challenging themselves with the media they consume.

I wouldn't call it jumping through hoops to watch something and enjoy dissecting it, and defending it. I'm not necessarily arguing with your point--for the majority of things, I agree with you (and it isn't like I don't consume complex media)--I just take issue with saying ATLA has no complexity.

Perhaps not, but (at least personally) I consider it more challenging to pick apart and think critically about ATLA rather than a show that forces you to think critically innately, in that you have to consciously remind yourself to give extra thought to the show and characters.

Frankly, I disagree, mainly because you brought up ATLA. Of all of the kids shows you could have picked, ATLA is probably the worst one for a "non-complex" form of media.
At least, if you're actually willing to think critically about it. The ones who don't are the ones who won't get anything out-
