Are you knitting from a pattern? Usually 56 (small), 64 (med), 72 (large) stitches as a guide. 2.75 mm is on the larger side for sock yarn. For a med woman’s sock, I would usually do 64 or 68 on a 2.25 mm needle.

Just looked these up and they are so good! Then so happy I discovered Stone knits sock patterns. Then discovered I already have her fox socks and radish socks in my favourites!

Thanks, yes! By the time I got to the ones that fit, I was using all the tricks - inside out, bigger needles, this weird shuffling thing I do to deal with the magic loop needle join…🤪! It was the rows with 3 colours that really got me!
