If I deep(ish) fry anything, I use just a cup of oil in a wok and turn what I’m frying. It works for chips, and I can re-use the oil to crisp meat for a stir-fry. Turning it also works for battered fish if it’s not big.
Using a litre and a half of oil nowadays is a daunting idea!

That looks wonderful. I once had a similar, Madagascan curry, full of spice and red hot. It was served with some artistically arranged, thin slices of chilled melon pushed into the top of the curry. It really worked , looked fabulous and actually added to both the ambiance and flavour of the curry.
