Today, Jan. 6 marks Epiphany. (I choose not to give air to the other Jan 6). In New Orleans, Epiphany marks the start of Carnival season leading to Mardi Gras. Celebrating with gumbo made with lots of love and elbow grease. 25 min of stirring to make the roux is not for the faint of heart!
