I machine quilt on my domestic machines. I have two. One’s a 30yo Pfaff and the other is a Baby Lock with a slightly larger throat space.

I always press, because that was how I was taught. But now you have me thinking about it. It does seem to me that you would get a tighter fold over the edge if you do press first. I would be interested in hearing why you shouldn't press first.
