Ah damn. The hangul on the label does say taeyangcho which I believe is the traditional Korean pepper. Is yours a powder? When I bought some it was coarser flakes. Not too hot and nicely smokey

Haha curd toast sounds extreme. I could never (though now I'm morbidly curious). I've used it mostly as a flavour enhancer, stirring into sauces and things instead of salt. You could probably use it as an alternative in any recipe that asks for miso tbh

That's for sure. Reliance on third party stuff has led to less in-house knowledge too. I really appreciate work like @pilcrowonpaper.com's Lucia auth guide in that respect - Even if you don't do it in production I think there's a lot of value in learning how to build stuff like sessions from scratch

If it isn't already, I reckon time to produce proper documentation should be part of your development budget. Sure, it's another overhead and can be painful to keep up to date but (imo) if you can maintain the code, you can maintain the docs
